The Tokushu Knife Iron Clad White #2 Forged Finish Santoku 165mm pairs a compact, versatile blade with your choice of custom wa handle. The dark forged finish contrasts with the polished bevel, while a 49 mm heel height provides useful clearance for everyday chopping, slicing and dicing.
A White #2 (Shirogami #2) carbon steel core is clad in iron. The spine tapers from 3.8 mm at the heel to 1.3 mm at the midpoint and 0.1 mm at the tip. Choose the handle combination you prefer, or select Blade Only for an unhandled blade.
Handle options
- Ebony & Horn: dark ebony with a naturally patterned horn ferrule; shown in the main photographs.
- Cypress & Horn: figured cypress with a light horn ferrule.
- Rosewood & Horn: warm-toned rosewood with a light horn ferrule.
- Rosewood & Ebony: rosewood with a dark ebony ferrule.
- Amboyna with Contrast & Horn: figured Amboyna with contrasting colour and a horn ferrule.

Care
Both the carbon steel core and iron cladding are reactive: patina is normal, and the blade can rust if left wet. Wash by hand, wipe during use and dry thoroughly after washing. Do not soak or put in a dishwasher. Apply a light coat of food-safe knife oil before extended storage.
Use a suitable wooden or soft plastic chopping board. Avoid bones, frozen food, twisting the edge and hard cutting surfaces. Maintain the edge with whetstones.
