Japanese Petty Knives

A petty knife is a compact Japanese utility knife used for detailed tasks that feel awkward with a full-size gyuto. It is ideal for fruit, citrus, shallots, garlic, herbs, garnishes, trimming boneless proteins, and small-board preparation.

Choosing a size

  • 75–90mm: best for peeling and in-hand work.
  • 120–135mm: a versatile size for trimming and quick board work.
  • 150mm: a compact utility knife with enough length for small slicing tasks.

Care

Use a wooden or quality soft synthetic cutting board. Hand wash and dry immediately. Do not use a petty knife on bones, frozen food, hard shells, or hard cutting surfaces, and avoid twisting or prying with the edge.
