Knife Sharpening & Workshop Services
Knife Sharpening & Workshop Services
At Tokushu Knife Malta, we believe a fine Japanese knife deserves expert care throughout its lifetime. Our European Workshop & Boutique in Mosta offers professional sharpening and specialty workshop services performed by hand using traditional Japanese techniques.
Every knife is serviced by Chef John Muscat, who specializes in Japanese kitchen knives, edge geometry, and custom craftsmanship.
Professional Knife Sharpening
Our sharpening service restores your knife's cutting performance while preserving the blade's original geometry.
Price: €10 per blade
Our standard sharpening service includes:
- Hand sharpening on premium Japanese whetstones
- Edge refinement appropriate for the knife's steel
- Final inspection and cutting performance check
- Light cleaning before collection
Chip Repair & Blade Restoration
Damaged edges, broken tips, and chipped blades can often be professionally restored.
Repair work varies significantly depending on the condition of the knife, so restoration services are individually quoted before work begins.
Handle Installation
Already have a replacement handle? We can professionally install it for you.
Handle Installation: €25 per knife
This service includes professional fitting and installation of a customer-supplied compatible wa handle.
Please note: This price covers installation only and does not include return shipping, replacement handles, ferrules, or any additional modification work that may be required.
Custom Handle Making
Looking for something truly unique? We also offer bespoke custom handles crafted to complement exceptional Japanese knives.
Every custom handle is individually discussed with the customer and quoted according to the materials, complexity, and craftsmanship involved.
Custom Saya Making
Protect your investment with a handcrafted wooden saya built specifically for your knife.
Because every knife differs slightly in profile and dimensions, all custom sayas are individually fitted and priced by quotation.
Choil & Spine Polishing
Improve both comfort and refinement by having the choil and spine professionally rounded and polished.
This popular workshop service enhances comfort during long prep sessions while preserving the knife's original appearance.
Pricing varies depending on the knife and amount of work required.

Regular professional sharpening extends the life of your knife, improves cutting performance, and protects the craftsmanship of fine Japanese blades. We recommend sharpening before a knife becomes excessively dull to minimize steel removal and maximize its lifespan.
