The BENRINER Classic Japanese Mandolin is a made-in-Japan vegetable slicer designed for fast, clean, and consistent prep. Trusted since 1955, BENRINER is a kitchen staple for thin vegetable slicing, garnish work, and julienne cuts. This classic ivory model adjusts from approximately 0.5mm to 3mm, making it useful for delicate cucumber slices, onions, carrots, potatoes, radishes, cabbage, and other firm vegetables.
This mandolin includes interchangeable fine, medium, and coarse julienne blades, giving home cooks and professional kitchens more flexibility than a standard slicer. Use it for salads, pickles, stir-fry prep, garnishes, slaws, and restaurant-style plating. The blade is extremely sharp and should always be handled with care. Use the included finger guard whenever possible, especially when the vegetable becomes small or difficult to grip.
How to Use
Adjust the thickness before slicing: Hold the BENRINER at eye level and turn the adjustment screw underneath the cutting board. Turn the screw clockwise for thinner slices and counter-clockwise for thicker slices. The approximate slicing range is 0.5mm to 3mm.
Use on a stable surface: Place the mandolin securely on a steady cutting surface before slicing. Keep the slicer level and do not use it while distracted, rushed, or in an unstable position.
Use the finger guard: Attach the vegetable to the finger guard whenever possible. This is especially important as the vegetable becomes smaller, shorter, wet, or harder to hold.
Slice with control: Move the vegetable forward over the blade using smooth, steady pressure. Do not force the vegetable into the blade. Let the sharp blade do the work.
Using the julienne blades: To install an interchangeable blade, insert the blade into the blade slot with the cutting edge facing down. Tighten the screws securely before use. To remove the blade, loosen the screws and carefully slide the blade out while keeping fingers away from all cutting edges.
