The Tokushu Knife Stainless Clad White #2 Tsuchime Petty 80mm is a compact Japanese utility knife for peeling, trimming, garnish work and other small, precise tasks. Its short blade offers excellent control in hand and feels far more natural than a full-size gyuto when working with garlic, herbs, fruit or small vegetables.
White #2 carbon steel core
White #2, also known as Shirogami #2, is a simple, fine-grained Japanese carbon steel valued for taking an exceptionally keen edge and sharpening easily on whetstones. The exposed cutting edge is reactive and will gradually develop a natural patina, so it should be wiped clean and dried promptly after use.
Stainless cladding and tsuchime finish
Stainless cladding protects most of the blade face, reducing day-to-day maintenance while preserving the crisp cutting feel of the White #2 core. A hammered tsuchime finish gives the blade subtle texture and visual contrast without making the knife feel ornate.
Cherry wood wa handle
The lightweight cherry wood wa handle is paired with a pale wood ferrule. Its simple construction keeps the balance nimble and gives the small blade the control required for detailed work.

Care
Hand wash only and dry immediately. The stainless cladding is corrosion resistant, but the exposed White #2 cutting edge remains reactive. Use only on wood, rubber or soft synthetic cutting boards. Never place the knife in a dishwasher.
