The Hatsukokoro Kokugei Blue #1 Petty 120mm is a compact, tall-profile Japanese utility knife with the board clearance of a miniature santoku. Its Aogami #1 carbon-steel core takes an exceptionally keen edge, while reactive iron cladding and a rustic kurouchi finish give the knife its distinctive, work-focused character.
Why we like it
This is not a narrow Western-style paring knife. The Kokugei petty has extra height at the heel, making it comfortable for small-board work such as garlic, shallots, fruit, herbs, garnishes and trimming boneless proteins. The 120mm format is nimble in tight spaces, and the octagonal mono ebony handle keeps the knife balanced and precise.

Measurements and appearance may vary slightly because these knives are forged and finished by hand. Variation in the kurouchi finish, forge marks and minor asymmetry are normal characteristics of this rustic line.
Carbon-steel care
The Blue #1 core and iron cladding are fully reactive. Wash and dry the knife immediately after use, never place it in a dishwasher, and do not leave it wet or resting against acidic ingredients. A natural patina will form with use and is expected. Apply a thin coat of food-safe camellia or mineral oil before longer storage.
Recommended use
Excellent for fruit, shallots, garlic, herbs, garnishes and boneless protein trimming. Use a wooden or soft synthetic cutting board. Do not use it on bones, frozen food or very hard ingredients, and avoid twisting or prying with the edge.
