The Hatsukokoro Kurogane Blue #2 Gyuto 210mm is a full-size Japanese chef’s knife forged in Tosa, Japan. Its Blue #2 carbon-steel core takes a keen edge and holds it well, while the soft-iron cladding and rustic kurouchi finish give every blade its own character. The long, versatile profile handles vegetables, proteins, herbs and everyday slicing with ease.
Why we like it
The Kurogane is a practical carbon-steel workhorse rather than an ultra-thin laser. Its substantial spine and confident grind provide reassuring feedback on the board and help food release from the blade face. Measurements are representative and may vary slightly because these knives are forged and finished by hand. Minor asymmetry, forge marks and variation in the kurouchi finish are normal features of this rustic line.
Carbon-steel care
The Blue #2 core and soft-iron cladding are reactive. Wash and dry the knife immediately after use, never put it in a dishwasher, and do not leave it wet or in contact with acidic food. A natural patina will develop with use and is expected. Apply a light coat of food-safe camellia or mineral oil before longer storage.
Use
Ideal for vegetables, boneless proteins, herbs and general prep. Use a suitable wooden or soft synthetic board. Do not cut frozen food, bones or very hard items, and avoid twisting the edge during a cut.
