Hasegawa FRK Wood-Core TPE Cutting Board
The Hasegawa FRK Series is a premium Japanese cutting board designed to balance knife-edge protection, durability, hygiene, and easy daily handling. Its thermoplastic elastomer (TPE) surface provides a secure, grippy cutting feel that helps reduce ingredient movement while remaining forgiving on thin, hard Japanese knife edges.
Inside the board is Hasegawa’s hermetically sealed wood core. This construction gives the board excellent rigidity while keeping it lighter and easier to lift, wash, and store than a similarly sized solid-rubber board. It stays stable during prep without the excessive weight associated with many professional rubber boards.
The FRK is an excellent all-purpose choice for vegetables, herbs, fish, proteins, slicing, and everyday meal preparation. It pairs especially well with high-performance steels such as SG2, SG-STRIX, VG-XEOS, Ginsan, VG-10, Aogami Super, Blue Steel, and White Steel.

FRK vs FPEL vs FSR
The FRK sits between Hasegawa’s other popular surfaces. FPEL uses soft polyethylene and has a lighter, slightly snappier feel. FSR uses softer rubber for maximum protection of very thin edges. FRK provides the middle ground: excellent grip and edge protection with greater resistance to deep cuts, making it a practical daily driver for both home and professional kitchens.

Choosing a Size
- Small: Garnishes, bar prep, and 120–150mm petty knives
- Slim: Narrow counters, line work, petty knives, and compact multipurpose knives
- Compact: Daily home cooking with santoku, bunka, nakiri, or 165–180mm gyuto
- Medium: A versatile prep station for bunka, nakiri, and gyuto up to 210mm
- Large: Professional prep and heavier vegetable work with 210–240mm knives
- Executive: Protein slicing, high-volume prep, 240–270mm gyuto, and long sujihiki
Care Instructions
Wash with warm water and mild detergent after use, then dry thoroughly before storage. For deeper sanitation, use the dishwasher, boiling water, or an appropriate diluted chlorine- or oxygen-based bleach according to proper kitchen-hygiene practices. Avoid prolonged soaking, direct flame, oven heat, and placing hot pans on the board.
The FRK is a premium slicing and preparation surface. Avoid chopping bones or frozen foods and limit aggressive cleaver or serrated-knife use to protect the TPE surface and extend the board’s working life.
