Craft and finishing
Japanese kitchen-knife production often involves several specialist craftspeople. Depending on the project, forging, heat treatment, grinding, polishing, sharpening, engraving, and handle fitting may be completed by different specialists. The final result therefore reflects both the smith's work and the skill of the sharpener or finisher.
