Seguridad y trazabilidad del producto
Overview
The Sakai Takayuki Homura Guren gyuto is forged by Itsuo Doi in Sakai, Japan. Its hammered kurouchi blade and octagonal burnt oak wa handle combine traditional forging with a distinctive, rustic finish.
This knife carries the maker's nominal 225 mm size designation. The knife measured by Tokushu Knife has a 210 mm cutting edge, 54 mm blade height and 246 g weight, making the actual dimensions clear when choosing your gyuto.
Steel and construction
Aogami #2 (Blue #2) carbon steel forms the cutting core, supported by iron cladding in a hammer-forged san-mai construction. The double-bevel, 50/50 edge is suitable for both right- and left-handed cooks. Use it for vegetables, boneless meat and fish preparation.
Handle
The octagonal burnt oak wa handle has an Urushi lacquer finish. Its contrast of light oak grain and darker burnt sections complements the textured blade. Natural wood grain and handmade finishing vary between individual knives.

Care and safe use
The carbon steel core and iron cladding are reactive and will develop a patina. Hand wash, wipe the blade during use and dry thoroughly after cleaning. Do not soak or put in a dishwasher. Use a suitable cutting board and avoid bones, frozen food, prying or twisting the edge through a cut. Keep the sharp edge protected during storage and out of children's reach.
