Seguridad y trazabilidad del producto
The Sakai Takayuki Fugaku brings the silhouette of Mount Fuji into the hamon of a traditional Japanese sashimi knife. Made from White #2 carbon steel, this 300 mm Honyaki Sakimaru Takohiki pairs a long, slender blade with an ebony handle and double water buffalo horn rings.
The Sakimaru Takohiki is a specialist slicing knife with a rounded, sword-like tip. Its extended blade supports long, controlled drawing cuts when preparing sashimi, helping the cook complete a slice in one smooth movement.
Honyaki craftsmanship
Honyaki construction begins with a single piece of steel. Differential hardening creates a hard cutting edge and a softer spine, with the hamon marking the transition. On the Fugaku, that hardening pattern takes the form of Mount Fuji, giving the blade its distinctive identity.
White #2, also known as Shirogami #2, is a reactive carbon steel. It rewards careful maintenance and is suited to cooks and collectors who appreciate traditional Japanese blades. The dark ebony handle and double water buffalo horn rings complete the knife with a restrained, elegant finish.

Care
Hand wash and dry immediately after use. Wipe the blade during preparation and never leave it wet or soaking. Carbon steel develops a patina and can rust if neglected. Apply a light coat of food-safe blade oil before extended storage.
Use a suitable wooden or soft cutting board. Avoid bones, frozen food, twisting and prying. Maintain the edge with appropriate whetstones or entrust sharpening to someone experienced with Honyaki knives. Do not use a dishwasher or pull-through sharpener.
