A 270mm slicer with your choice of custom wa handle
The Tokushu Knife Iron Clad White #2 Sujihiki combines a long, slender slicing profile with a forged finish and a choice of distinctive wooden wa handles. Its 270mm blade is suited to controlled draw cuts through boneless meat and fish, from carving a roast to portioning fillets.
Made in Japan, this sujihiki pairs a White #2 carbon steel core with iron cladding. The darker forged surface contrasts with the brighter edge area. Choose a complete knife with your preferred handle, or select the blade-only option for a separate handle fitting.
Choose your handle
- Full Amboyna with Contrast: richly figured reddish wood with a contrasting lighter section, as shown in the photographs.
- Full Ebony: a darker handle with prominent linear grain.
- Full Amboyna: warm colour and expressive figured grain.
- Full Cypress: a lighter golden handle with distinctive natural figuring.
- Blade Only: the blade without a handle. A suitable handle must be fitted before use.
Select your handle option to view its corresponding photographs. Natural wood colour and figuring vary; the photographs show the individual handled options available.

Carbon steel care
Both the White #2 core and iron cladding require attentive care. This knife is not stainless: moisture and acidic ingredients can cause discolouration and rust. A patina will develop through normal use.
- Hand wash with mild dish soap and dry thoroughly immediately after use.
- Wipe the blade clean and dry during preparation, especially after cutting acidic ingredients.
- Do not soak or place in a dishwasher.
- Apply a light coat of food-safe knife oil before extended storage.
- Keep the wooden handle dry and avoid prolonged contact with water.
- Use controlled cuts on a suitable cutting board. Avoid bones, frozen food, twisting and prying.
- Maintain the edge with suitable whetstones or a professional sharpening service.
Blade-only option
The blade-only option is supplied without a handle and weighs 111g. It is intended for a suitable wa handle to be fitted separately; do not use the bare tang as a handle.
