The Hatsukokoro Ginga ATS-34 Nickel Damascus Santoku 180mm combines an ATS-34 stainless steel core with a striking nickel Damascus finish. Its versatile santoku profile is suited to everyday slicing, chopping and precise preparation of vegetables, boneless meat and fish.
The blade measures 49 mm tall, with a spine that tapers from 3.8 mm at the heel to 2.0 mm at the midpoint and 0.5 mm near the tip. Choose a finished knife with an Amboyna and buffalo horn handle, a rosewood and ebony handle, or a blade without a handle for your own fitting project.
Handle options
- Amboyna / Buffalo horn — A: figured Amboyna wood with a buffalo horn ferrule, shown in the featured photo and accompanying detail views.
- Amboyna / Buffalo horn — B: the second Amboyna and buffalo horn knife, shown in the darker photographs. Both Amboyna options are priced equally.
- Rosewood / Ebony: rosewood handle with an ebony ferrule.
- Blade only (no handle): supplied without a handle. A suitable handle must be fitted before use.

Overall length and weight depend on the fitted handle. Natural wood grain, horn colour and Damascus patterns vary, and lighting affects their appearance in photographs.
Care
Hand wash and dry thoroughly after use. Do not put in a dishwasher or leave soaking. Use a wooden or soft plastic cutting board. Avoid bones, frozen foods and twisting the edge during a cut.

Orders delivered within the European Union are shipped from within the EU, so no import duties are normally due upon delivery. For supported destinations outside the EU, when duties or taxes apply, we use Delivery Duty Paid (DDP) services so the applicable charges are handled in advance.
