Overview
The Teruyasu Fujiwara White #1 Nashiji Gyuto 180mm is a compact all-purpose chef’s knife forged in Tokyo, Japan. Its Shirogami #1 carbon-steel core is capable of exceptional sharpness and responds beautifully to whetstones, while stainless cladding makes daily care more approachable. The rustic nashiji finish and Fujiwara’s distinctive finger notch give this handmade blade unmistakable character.
At 180mm, this gyuto is agile and easy to control—ideal for home kitchens, detailed prep and cooks who prefer a shorter chef’s knife. A traditional magnolia wa handle keeps the knife light and blade-forward in hand.

Care
The exposed White #1 core is reactive carbon steel. Hand wash and dry immediately after use, never place the knife in a dishwasher, and avoid twisting or cutting frozen foods and bones. A natural patina will develop with use.

Orders delivered within the European Union are shipped from within the EU, so no import duties are normally due upon delivery. For supported destinations outside the EU, when duties or taxes apply, we use Delivery Duty Paid (DDP) services so the applicable charges are handled in advance.
