Overview
The Hatsukokoro Ryuhyo SG2 Damascus Bunka 180mm combines a thin, precise grind with premium SG2 powdered stainless steel and striking layered Damascus cladding. Its versatile bunka profile has a flat section for efficient push cutting and a pointed k-tip for detail work, making it an excellent all-purpose knife for vegetables, herbs, boneless proteins, garlic, shallots, and everyday prep.
- Black Damascus / Walnut: Dark black-coated Damascus cladding paired with a walnut octagonal wa handle and black ferrule.
At the core is SG2 / R2 powder stainless steel, valued for fine grain, excellent edge retention, and corrosion resistance. The thin geometry and refined edge give the knife a smooth, agile cutting feel, while the stainless construction keeps maintenance straightforward.
Why Choose a Bunka?
A bunka offers the versatility of a santoku with a more acute k-tip. The flatter edge works especially well for push cutting and chopping, while the pointed tip provides extra control for trimming, scoring, and fine slicing.
Care
Hand wash only and dry immediately after use. Do not place the knife in a dishwasher or use it on bones, frozen food, glass, stone, or other hard surfaces. Use a knife-friendly cutting board and avoid abrasive cleaners. On the Black Damascus , normal use may gradually create character and wear in the dark surface finish.
