Carbon-steel edge: hand wash and dry immediately. Expect a natural patina; avoid bones, frozen food and twisting cuts.
Hatsukokoro Kaijin Blue #2 Gyuto 210mm
The Hatsukokoro Kaijin combines a Blue #2 carbon-steel core with stainless cladding and a mono olivewood wa handle. It offers the sharpness and sharpening response of traditional carbon steel while keeping most of the blade face easier to maintain.
The 210mm-class gyuto profile is versatile for vegetables, herbs, fruit, fish, and boneless proteins. Its tall heel and moderate weight provide comfortable knuckle clearance and a confident feel for push cutting, controlled rocking, and slicing.
Care
The exposed Blue #2 edge is reactive and will develop a natural patina. Hand wash, dry immediately, and avoid dishwashers, bones, frozen food, hard shells, and twisting cuts. A light coat of food-safe camellia oil may be used before extended storage.
