Overview
The Masutani VG-1 Nashiji Gyuto 180mm is a compact, nimble Japanese chef’s knife built for everyday kitchen work. Its VG-1 stainless core takes a keen edge while remaining straightforward to maintain, and the stainless cladding carries a subtle nashiji—or pear-skin—finish that gives the blade understated character.
At 144g, this gyuto feels light and agile in hand. The 180mm profile offers excellent control for vegetables, boneless proteins and general prep, while the brown Western-style handle and stainless bolster provide a familiar, secure grip.

Why We Like It
This is an approachable Japanese all-rounder: thin enough to move cleanly through food, compact enough for smaller boards and easy to care for thanks to its stainless construction. It is a strong choice for home cooks and professionals who want Japanese cutting performance with the familiar feel of a Western handle.
Care
Hand wash and dry immediately after use. Do not place in a dishwasher, and avoid bones, frozen foods and twisting cuts. Use a suitable wooden or soft synthetic cutting board.
