A long, purpose-built slicing knife for clean, controlled cuts through roasts, brisket, boneless proteins and fish. The 270mm sujihiki profile helps complete each slice in a smooth draw, reducing sawing and preserving a clean presentation.
Handcrafted in Hanoi, Vietnam, this V3 knife uses 52100 carbon steel with a traditional Kurouchi finish and a refined mono ebony wa handle. At 211g, it has a substantial, steady feel, while the strong distal taper from 2.5mm at the heel to 0.5mm at the tip supports precise slicing.

Carbon Steel Care
52100 is a reactive carbon steel and will develop a natural patina with use. Hand wash only, dry immediately after use, and apply a light coat of food-safe knife oil before extended storage. Do not place in a dishwasher or leave the blade wet.
Because each knife is handmade and ebony has natural grain variation, colour and finish may differ slightly from the photographs.
