The Hatsukokoro Kaijin Blue #2 Santoku is a light, precise all-purpose Japanese kitchen knife built for clean slicing, dicing and push-cutting. Its Aogami #2 carbon-steel core delivers a keen, easy-to-refresh edge, while the stainless cladding makes everyday care more manageable. Care
The cladding is stainless, but the exposed Blue #2 core at the cutting edge is reactive and can develop a natural patina. Hand-wash only and dry immediately after use. Do not use on bones, frozen food or hard pits, and avoid twisting the blade during cuts. Apply a thin layer of food-safe knife oil before extended storage.
As this is a handcrafted knife with a natural wood handle, measurements, finish and grain may vary slightly from piece to piece.
