Overview

The Nigara VG XEOS Polished Tsuchime 170mm Santoku combines Nigara Hamono’s centuries of Japanese forging heritage with a modern, low-maintenance stainless steel construction. Its versatile santoku profile is designed for slicing, dicing and mincing vegetables, herbs, fruit and boneless proteins.

The VG-XEOS stainless core offers strong edge retention, toughness and corrosion resistance, while the stainless Damascus cladding creates a flowing layered pattern along the cutting edge. A polished tsuchime finish gives the blade its distinctive hammered texture and refined visual depth.

The 49mm heel provides comfortable knuckle clearance, while the 2mm spine and refined geometry keep the knife precise and responsive. The listed 305mm overall length and 146g weight were measured with the original fitted handle; measurements and balance may vary slightly between handle options.

Handle Options

  • Red Burl & Resin Custom Handle: The original fitted octagonal wa handle with warm red tones.
  • Amboyna Burl & Buffalo Horn: Rich Amboyna burl figuring paired with a light buffalo horn ferrule.
  • Blue-Green Prisma Custom Handle: A premium wood-and-resin handle with blue, green, black and gold details.
  • Red-Aqua Prisma Custom Handle: A premium wood-and-resin handle with vivid red and aqua accents.
  • Red-Brown Prisma Custom Handle: A premium wood-and-resin handle with deep red, brown and metallic tones.
  • No Handle / Blade Only: Supplied with the exposed tang, ready for your own custom wa handle.

Each configuration is individually photographed so you can select the exact handle style shown.
