Hatsukokoro Hayabusa ATS-34 Migaki Kiritsuke 240 mm
A long, slender Japanese kitchen knife with a precise kiritsuke tip, a clean Migaki finish and an ATS-34 stainless steel core. The 240 mm blade gives you room for controlled slicing and everyday preparation, while its 50 mm heel height provides useful knuckle clearance. A slim spine tapers from 2.3 mm at the heel to a fine tip for detailed work.
Right-handed asymmetric bevel: this knife is intended for right-handed use. Preserve its existing asymmetry when sharpening; contact Tokushu Knife Malta if you need sharpening advice.
Steel and finish
The ATS-34 stainless core is supported by stainless cladding in a three-layer San Mai construction. The Migaki finish shows a fine brushed texture and the visible transition between the core and cladding. It offers the convenience of stainless steel while still benefiting from careful washing, prompt drying and proper storage.
Choose your handle
Select one of four fitted wa handles, or choose the unmounted blade for your own handle project. The photographs for each option show its corresponding knife. The main photographs feature the Cypress & Horn version.
