A compact, versatile all-purpose knife for everyday prep. The 165mm santoku profile is well suited to vegetables, boneless proteins and herbs, while the 46mm blade height provides comfortable knuckle clearance. At 131g, it feels light and responsive, with a fine 0.3mm tip for precise cuts.
Handcrafted in Hanoi, Vietnam, this V3 knife uses 52100 carbon steel with a distinctive Kurouchi finish and a burnt wood wa handle. The dark forged surface and naturally varied handle give every knife a character of its own.

Carbon Steel Care
52100 is a reactive carbon steel and will develop a natural patina with use. Hand wash only, dry immediately after use, and apply a light coat of food-safe knife oil before extended storage. Do not place in a dishwasher or leave the blade wet.
Because each knife is handmade and each burnt wood handle has natural grain variation, colour and finish may differ slightly between pieces.

Orders delivered within the European Union are shipped from within the EU, so no import duties are normally due upon delivery. For supported destinations outside the EU, when duties or taxes apply, we use Delivery Duty Paid (DDP) services so the applicable charges are handled in advance.
