Care
52100 is a reactive carbon steel and will develop a patina with use. Hand wash only, dry immediately after use and apply a light coat of food-safe oil before longer storage. Avoid dishwashers, bones, frozen foods and twisting the edge through hard ingredients.
As these knives are individually made, small cosmetic variations in the kurouchi finish and handle grain are normal.
