The Kokugei Blue #1 Kurouchi Gyuto 210mm is a robust all-purpose Japanese chef's knife with distinctive hand-forged character. Its substantial heel transitions into a fine distal taper, giving it confident board presence while keeping the tip responsive for detail work.
Blue #1 (Aogami #1) carbon steel offers excellent edge potential and retention, while the kurouchi finish gives the blade a rustic, traditional appearance. The single-piece mono ebony wa handle adds a clean, understated finish and a secure, comfortable grip.

Carbon Steel Care
This is a reactive carbon-steel knife. Wipe the blade during use, wash it by hand and dry it immediately. Do not place it in a dishwasher or leave it wet. A natural patina will develop over time.
As a handmade knife, small variations in finish and dimensions are normal. Measurements are based on the photographed knife.
