The Tokushu Knife Stainless Clad Blue #2 Nashiji 105mm is a compact knife for precise everyday preparation. Its short blade is easy to control when trimming, peeling and cutting smaller ingredients, while the Blue #2 carbon steel core is paired with stainless steel cladding and a textured nashiji finish.

Choose a custom wa handle in rosewood and buffalo horn or Amboyna and buffalo horn. A blade-only option is available for your own handle fitting. The rosewood and buffalo horn knife is shown in the main product photos.

Care

The stainless cladding helps reduce maintenance, but the exposed Blue #2 carbon steel edge can develop a patina and can rust if left wet. Hand wash and dry promptly after use. Do not soak or place in a dishwasher. Use a wooden or suitable plastic cutting board, and avoid bones, frozen food, hard surfaces and twisting the blade during a cut.
